Everyone's a winner: I didn't make many New Year's resolutions, but I did say that I'd try to eat out less and cook more using only ingredients that I can pronounce. So, this week I'm going processed food free. One of the first recipes, was this yummy pasta from allrecipes.com.
Spinach and feta pasta - penne (2 servings) - 1 tbsp olive oil - 1/2 cup chopped onion - 2 cloves of garlic, minced - 14oz can of diced and *well* drained tomatoes - 1 cup sliced mushrooms (I think I used more) - 1 whole bag of baby spinach - salt and pepper - pinch of hot pepper flakes - feta cheese, crumbled - Oregano, basil, herbs ... 1. Cook pasta 2. Heat olive oil, brown onions and garlic. Mix in mushrooms and tomatoes. Season with salt and pepper. At this point I went freestyle adding dried oregano and basil. Add baby spinach and let wilt. 3. Serve sauce over pasta, add crumbled feta to the top. Easy! January 05, 2006 ||
